Place chicken in slow cooker.
Combine bell pepper, garlic, onion, tomatoes, chicken broth and cumin in a small bowl. Pour mixture over chicken.
Cook on High for 3 hours.
When chicken is tender, use a fork to shred the meat. Adjust seasonings adding additional water if necessary.
Just before serving, add cilantro to slow cooker. Stir to blend.
Ladle into soup bowls, top with avocado and a squeeze of lime juice.
