Preheat oven to 350 degrees F. Grease a 9 x 5 loaf pan.
Using a high powdered blender or Magic Bullet, powder the erythritol.
In a large bowl, whisk together the dry ingredients.
In a medium bowl, whisk together the wet ingredients.
Mix the dry ingredients into the wet. Fold in the cranberries.
Pour batter into pan and bake 1 hour 15 minutes, until top is golden brown and toothpick comes out clean.
Transfer to a wire rack and let cool before removing from pan.
