First, poach chicken. Place chicken breasts in a single layer in the bottom of a safe, heavy-bottomed pot. Cover chicken with spring or filtered water. Bring to a boil, then quickly reduce heat to low so that the water is barely at a simmer. Partly cover and gently simmer for 10 minutes. Turn off heat completely, and allow chicken to remain in hot water for 15-20 minutes.
Meanwhile, heat oil in a large skillet over medium-high heat. Add onion, cabbage, carrots, celery and garlic and cook until cabbage is wilted, about 3 minutes.
Add broth, fish sauce, aminos and sesame oil and simmer for 2 minutes. Stir in arrowroot, increase heat to medium-high and bring to a boil.
Dice chicken and stir in. Reduce heat and simmer until heated through, about 4 minutes.
While chicken and veggies are simmering, prepare Miracle Noodles according to package instructions.
Toss chicken and veggies with noodles and serve.
