Melt butter in a saucepan over medium heat.
When butter is bubbling, add in water, erythritol and maple extract and stir well. Allow mixture to simmer over medium heat for 15 minutes, or until it begins to thicken. Remove the milk solids ( brown specks) with a strainer spoon.
Sprinkle the xanthan gum over the top of the liquid as it boils, whisking well to incorporate.
Continue to whisk until no lumps remain. Remove the pan from heat, and let rest for 2 minutes to continue thickening.
Store at room temperature in a covered container. Reheat before serving.
