In a small bowl, beat eggs, pepper and salt together.
Heat oil in a 6 to 6-1/2 inch skillet over medium-high heat, until oil creates tiny ripples in the pan.
Pour in eggs and tilt skillet, moving in a slow circular motion, until bottom is evenly covered.
When edges appear cooked, about 30 seconds to 1 minute, flip and cook for another 30 seconds.
Place feta mixture on one side, and evenly top with salmon.
Using a spatula, carefully transfer to a plate, folding in half, over the salmon and feta, as you transfer the omelet to the plate.
Serve with fresh apple slices.
