Preheat oven to 400 degrees F.
Combine the beef, bacon, and shallot in a bowl.
Season with salt and form into 2-inch meatballs.
Toss the cauliflower with the olive oil and lay both the meatballs and cauliflower florets on a parchment lined sheet pan.
Roast for 20-25 minutes, until beef is cooked through and cauliflower is tender.
