Heat the oil in a skillet and add the shrimp.
Sear until pink and remove from pan.
Add the mushrooms and thyme and season with salt. Cook until browned, and add the spinach.
Stir until spinach is wilted and add the lemon juice.
Add the shrimp back to the pan and heat through before serving.
