Heat the oil in a skillet over medium high heat.
Add the steak and sear until browned. Flip and cook to desired temperature. Remove steak from the pan, transfer to a plate and cover.
Add the onions to the pan. Cook 2 minutes. Add remaining veggies and cook until crisp-tender.
Add the thyme, season with salt and add the beef back to the pan.
Heat through before serving.
