Add half the coconut oil to a large skillet on medium high heat. Add onions and sprinkle with half the salt. Set heat to medium and cover. Stir occasionally until onions caramelize.
While onions cook, fill a pot with about 1-inch water and place a steamer basket inside. Place the cauliflower on top of the basket. Cover the pot and steam on high for 5-10 minutes, or until cauliflower is soft.
In the meantime, heat a cast iron skillet to medium. Add remaining oil and precooked bratwurst. Cover with a lid and cook to heat through and brown, turning occasionally.
Place cauliflower in a blender with coconut milk. If using an immersion blender, place in a bowl. Add the garlic powder and blend until desired consistency is achieved. Add water if needed. Sprinkle with remaining salt, to taste.
Divide cauliflower mashers among plates, top with bratwurst and onions. Serve.
