Preheat oven to 400 degrees F. Oil a sheet pan or a baking dish.
Place the carrots in a medium bowl, and toss with the avocado oil, melted butter, salt and thyme.
Spread carrots in an even layer in the prepared pan or baking dish. Cover with a lid or foil, and bake 30 minutes.
Test for tenderness and return to oven for 10-12 minutes more, if needed.
