Preheat oven to 400 F.
Peel the plantain and grate using a hand grater or the grater attachment to your food processor.
In a large bowl combine arrowroot, green banana flour, baking soda, cream of tartar, and salt. Add the coconut milk and oil, stir well to combine. Add in the shredded plantain and work with your hands to form a dough.
Divide dough into 4 pieces and roll each into a ball. Place on a parchment paper-lined cookie sheet and bake for 15-20 min, until outsides are slightly golden.
