Preheat oven to 375 degrees F.
Season the chicken thighs with salt and rosemary.
Heat a large, ovenproof skillet over medium high heat and add half of the oil.
Add the chicken and sear until browned on all sides.
Drizzle the lemon juice over top, and transfer to the oven. Bake for 30-35 minutes until chicken is cooked through to 165 F at thickest part.
Sprinkle with the lemon zest before serving.
