Add bacon to the Instant Pot and turn to Saute. Cook, stirring occasionally to cook through.
Meanwhile, cut the pork roast into three or four equal pieces. poke holes in the pork and insert the garlic cloves.
Sprinkle salt over the pork and place in the Instant Pot over the cooked bacon.
Pour in the water.
Close and lock the lid. Set to manual, choose HIGH pressure and set the time to 90 minutes.
Allow pressure ot release naturally or do a quick release.
Pour the pork into a large glass bowl and shred using two forks.
