Slice chicken into strips.
Toss chicken with soy sauce (tamari).
Heat a grill. Grill 6 minutes on each side or until opaque in center. If grill in inaccessible, heat a safe, non-stick pan over medium high heat and sauté chicken strips thoroughly, about 8 minutes.
Combine cucumber, carrots, sprouts, scallions, basil and sesame seeds. Sprinkle with rice wine vinegar.
Toss the grilled chicken with veggies and herbs.
Serve the chicken-veggie mixture with Bibb lettuce wraps.
