Add ground chicken to a large bowl. Sprinkle with thyme, sea salt and minced onion. Mix thoroughly but gently with hands. Form into equally portioned, 1 inch patties. Wash hands well.
Preheat a large cast iron skillet to medium-high heat and add coconut oil. Swirl to coat.
When oil is shimmering, add chicken burgers and place a lid on the skillet. Cook on each side for 6 minutes, or until internal temperature reaches 165F.
Serve with your choice of toppings and sides.
